Serves 4-5 people
- ½ cauliflower
- ¼ of cabbage
- 3 medium size carrots
- 1 cup of green peas
- ½ cup of finely chopped parsley
- ½ cup of finely chopped green onion
- 1 cup of parmesan cheese
- Salt and pepper to taste
- 4 egg whites
- 4 egg yolks
- 1 table spoons of olive oil
- 1 table spoon of melted coconut oil
Preheat the oven to 375 degrees.
In separate pans cook each vegetable in water with a dash of salt and pepper. When ready, cut them in bite size pieces.
Spray a 5×5 cake pan with olive oil and place the vegetables in layers.
Beat the egg whites in a mixer until they are hard as a merengue. Add the egg yolks, coconut oil, olive oil, salt, parsley and green onions.
Pour the egg mixture on top of the vegetables. Sprinkle parmesan cheese on top.
Bake for about 10-15 min and serve warm.
