Serves 4-5 people
Dry Ingredients
- 1 chopped large onion
- 1 cup of pre-washed dry green peas
- 3 unpeeled medium potatoes
- 1 pinch of ground nutmeg
- 2 tablespoons of fried chopped bacon
- Salt and pepper to taste
Wet Ingredients
- 2 tablespoons of olive oil for cooking
- 50 Oz of chicken stock
Directions
*The night before, wash the green peas and soak them in chicken stock. Let it rest in the fridge until the next day.
In a large non-stick pan, on medium heat, add the olive oil, a pinch of salt and the onions until the onions become transparent.
Add the chicken stock with green peas and cook for about 45min, stirring occasionally. Add the chopped potatoes and bring the mixture to boil until the green peas and the potatoes are fully cooked. Set aside and let it cool down.
When the mixture is warm, put it in the blender until it is smooth.
Bring it back to boil. Add the fried chopped bacon, and nutmeg.
Add salt and pepper to taste and serve.
