Serves 6 people
- 2 cups of gluten-free flour
- ½ cup of sugar substitute ( xylitol )
- 1 tablespoon of salt
- 3 tablespoons cinnamon
- ½ tablespoon of baking powder
- 3 eggs
- 2 tablespoons of vanilla
- 1 cup of oil
- 2 cups of grated zucchini
Preheat oven to 350o F. For this recipe, use a glass pan if possible.
Mix all dry ingredients, then add the wet ingredients. Pour the dough in a pre-greased pan and bake for 45-60min.
*if you are looking for ‘extra indulgence’, add 2 tablespoons of 70% dark chocolate chips into the dough just before putting it in the oven.
