Veggie Banana Bread recipe
I know it is not easy to follow an anti-inflammatory diet when you have a husband and kids. But this Veggie Banana Bread certainly makes it easier, since the little ones will probably like it. It is an easy way to include more vegetables in the day, and they won´t even know it! Check the recipe:
1 cup of almond flour
1/2 cup of oatmeal
1 cup of grated zucchini and carrots (1 medium unit each)
2 medium bananas
1 teaspoon of powdered yeast
1/2 teaspoon vanilla
1 teaspoon of cinnamon powder
Preheat the oven to 350F (180C)
Mix the banana and eggs well. Then add the other ingredients. Vegetables last.
Add the grated zucchini and mix some more.
Place the dough in a pan (I like to use a square pan) lined with parchment paper.
Bake for 40 to 50 minutes or until the toothpick comes out clean.
Let the cake rest and cool for 5 minutes, and take it out of the pan by pulling the parchment paper.
Wait to cool completely before slicing! Lasts better in the fridge.
