Vegetables Egg Bites recipe
This incredible – and easy – recipe is inspired by the delicious egg bites sold at Starbucks.
If you have tried the egg bites at Starbucks, then I’m sure you can agree that they’re pretty incredible. But now, you can make a healthier version of Starbucks egg bites at home.
I switched bacon and Swiss cheese for vegetables and ricotta! Check it out:
Ingredients:
5 large eggs
2 cups of ricotta – if you want dairy-free, you can use a vegan cheese
1/8 teaspoon of salt
1/8 teaspoon of freshly ground black pepper
1 cup of chopped vegetables – I used carrots, broccoli, and onion. It was delicious!
Instructions:
1 Preheat the oven to 350 degrees F. Spray six or more cups in a regular-sized muffin tin generously with nonstick spray.
2 In a large bowl, whisk the eggs. Then whisk in the ricotta, salt, and pepper. Alternately, you can combine these ingredients in the blender. This results in a fluffier texture.
3 Pour the mixture in the muffin tins – filling each about ½-full to leave room for the egg to expand while backing. Top with the chopped vegetables.
4 Bake for 30 minutes or until the eggs are completely cooked. Remove from the oven, take out the tin and serve warm.
