Healthy carrot cake recipe

I love practical sweet recipes, like this carrot cake without sugar, gluten, and with low-carb option! Easy way to kill the craving for sweets without harming your health. This is how I do it:
Blend in a blender:
2 eggs
Vanilla essence to taste
120g of carrots (it is essential to weigh it to be very fluffy)
2 heaped tablespoons of xylitol (or coconut, brown, demerara sugar, or honey)
3 tablespoons of olive oil (or coconut oil or ghee butter)
As it mixes, add little by little:
2 tablespoons of rice flour (or 1 tablespoon of well-filled coconut flour, or 4 tablespoons of almond flour)
Add also 1 tablespoon yeast, but do not liquefy – stir gently.
Place in a 12x8cm pan and bake in a preheated oven at 350F (180C) for about 30 minutes.
For the topping, blend in a blender:
1/3 cup of warm water
1 cup of coconut milk (or powdered milk)
1 tablespoon of cocoa powder
Sweetener to taste
Put the icing on the cake and serve!
