
Banana bread – This is GLUTEN-FREE, DAIRY-FREE and SUGAR-FREE
Makes: 1 loaf
Cook time: 1 hour
Dry Ingredients
- 2 cups of flour
- ½ cup of xylitol
- 2 teaspoons of baking soda
- 1 tablespoon of baking powder
- 1 teaspoon of salt
- 1 teaspoon of cinnamon
- 4 very ripe bananas
- 1 teaspoon of chia
Option: sprinkle some dairy-free chocolate chips into the batter before baking.
Wet Ingredients
- 2 eggs
- 1 teaspoon of vanilla
- ½ cup of vegetable oil
Directions
Bake the entire bananas (with the peel) at 300°F for 20 minutes. Reserve.
Preheat the oven to 350°F.
Combine all the dry ingredients (except the cooked bananas) in a medium bowl.
Combine all the wet ingredients in the mixer or blender. Add the baked bananas. I prefer the blender, but it will only work if you have a potent one.
Stir the wet contents with the bananas with the flour mixture, little by little.
Bake in 9-by-5 inch, pre-greased loaf pan for about 60min.
