Gluten-free bread

Dry Ingredients

  • ½ cups of tapioca flour
  • ½ cup of rice flour
  • ¾ teaspoon of salt
  • 1 tablespoon of lecithin
  • 1 tablespoon of xylitol
  • 1 tablespoon of baking soda
  • 2 tablespoons of baking powder

Wet Ingredients

  • 4 large eggs, room temperature
  • 1 tablespoon orange juice concentrate

Instructions

Preheat oven to 375 F

Whip egg whites until stiff. Add egg yolks one at a time and then whip in orange juice concentrate. Add lecithin and mix briefly. Add dry ingredients and mix well.

Place in a lightly greased 9x5x2¼ bread pan and bake for 25min. Dough will not rise to top of the pan.
